Light and Healthy Summer Ideas

Buy fresh season fruits and vegetables like tomatoes, peppers, watermelon, berries, peaches, cherries, corn and citrus fruit that are abundant during the summer months. The best way to cleanse the body is to eat fresh fruit, vegetables, meats with no processed ingredients.
Some dish ideas for the season are:
Grilled salmon generously garnished with tomatoes and peppers while adding fresh garlic, salt and pepper for taste.
Quinoa salad dice some peppers, cucumbers, tomatoes, celery, finely diced the onion, chopped cilantro, drizzle vinegar and lemon juice over the top, pinch of salt and pepper to taste.
Grilled chicken over a bed of fresh lettuce, arugula or spring mix, chopped strawberries, pecans, diced avocado. Pour home made balsamic dressing over the top and toss to coat. Serve right away.
Grilled white fish with freshly made pineapple salsa. Finely dice the pineapple, cilantro, tomatoes, bell pepper, jalapeno, lime juice and onion. Season with salt. You can make a great tasting dressing with soy sauce and honey, finely grated ginger. Mix the dressing with extra virgin olive oil and brush the fish to add sensational flavor.
Eye opening fresh fruit salad made with vibrant colors of the rainbow: strawberries, pineapple, blueberries, red grapes, kiwi and mandarin oranges. Add honey, lime juice, zest (lime peel) and a pinch of salt. The acidity from the lime juice will prevent the fruit from browning too quickly.
